As there is no facility for creating tables in ICE, and I understand the suggested use of repeating regions, have you considered making Snippets available?
I could see creating a few 'default' designed tables as Snippets that my client could use if she wanted.
The difficulty in my setting up repeating regions is that it restricts her possibiliities as she designs the contents in the editable regions.

The table example is a very good one, but can you detail a little bit how you can see this work?

Sure thing.
I have created pages with editable areas that are simply divs that you might look at as ''sandbox'' areas for the Religious Education Director to put her own content into.
Sometimes that will be images and text that I can allow her to style as she wants; I can give her floatright and floatleft styles to apply to images. But, being an organized type, she wants to display a table of the whole range of curriculum for the upcoming year, showing age group, student, and curriculum title for each; the true use of a table! And that table might not persist...she will constantly update the contents of her page.
Rather than building the structure into the page myself (she might not always want a table) I could foresee making several snippets of tables...2 column, 3 column, 4 column...that she could insert when she needs one.
But it would be better for it to be a table widget, in fact, for her to set up and manage within her content space for as long as she needs it.
